The intention of blue house is to make the tastiest and healthiest bread possible. To this end, all the bread made is naturally leavened using a six year old whole grain rye sourdough starter. Much of the flour used to make the loaves is fresh stone-milled every week onsite from heritage wheat, rye and spelt berries sourced from local farmers utilizing regenerative farming practices. In addition, nearly all of the other ingredients used to make the breads – such as nuts, seeds, dried fruits, herbs and vegetables – are organic.
